Food and Quarantine
Dear Summer,
Since quarantine, my mom has been making so many new recipes to try that way my family can have a variety of meals to eat. We recently tried this tasteful quinoa salad that she made up on the spot and I absolutely love it!
Ingredients:
1 cup of chopped roma tomatoes
2 tablespoons of basil leaves
2 tablespoons of parsley leaves
Feta cheese (optional, as much as you want to put in)
1 cup of chopped cucumber
2 cups of cold cooked Quinoa
Lemon vinaigrette
Pinch of salt and pepper
Recipe for vinaigrette:
¼ cup of olive oil
1 clove minced garlic
2 tablespoons lemon juice (1 large lemon)
1 tablespoon golden balsamic vinegar or champagne vinegar
1 teaspoon pure maple syrup or honey
Kosher salt and black pepper to taste
Instructions:
First you will make the dressing. In a small bowl, whisk together the olive oil, garlic, lemon juice, vinegar, maple syrup or honey, salt and pepper. Set aside.
In a larger bowl, combine the cold cooked quinoa, cucumber, tomatoes, basil, and parsley.
Pour the dressing on the salad and gently stir until the salad is coated with the dressing. Season with the salt and pepper, and add the feta cheese (optional). You are done, eat up!
