Muffins and Gardens
Every year my family plants a garden full of fresh and organic vegetables. This year, we are producing so much zucchini we have to keep thinking of creative ideas to eat them! One of the recipes that we always make with the zucchini is chocolate chip zucchini muffins. I love them so much because they are great for breakfast along with some orange juice and fresh fruit. Without any further ado, here is the glorious recipe!
3 cups all-purpose flour
2 cups sugar
2 teaspoons ground cinnamon
1 teaspoon baking soda
½ teaspoon baking powder
½ teaspoon ground allspice
1 cup vegetable oil
2 teaspoons vanilla extract
2 cups grated zucchini
1 cup (6 ounces) semisweet chocolate chips
Preheat the oven to 325.
In a large bowl, combine the flour, sugar, cinnamon, baking soda, baking powder, and allspice.
In a small bowl, beat the eggs oil and vanilla.
Stir the wet ingredients into the dry ingredients just until moistened. Then, fold in the zucchini and chocolate chips.
Transfer to two greased or cupped muffin tins.
Bake at 325 until a toothpick inserted near the center comes out clean.
Cool for 10 minutes before removing from pans to wire racks.
